Pineapple and Vodka Surprise


  • 1 ripe Pineapple  
  • zest and juice 1 orange  
  • 3 tbls brown sugar  
  • 2/3 cup vodka  
  • .300 ml cream  
  • 4 tablespoon chopped fresh mint


  1. Preheat oven to 200 C  
  2. Peel and chop pineapple into bite-sized chunks. Place in ovenproof dish and cover with orange juice and zest. Sprinke with 2 tablespoons brown sugar and pour at least 1/2 cup vodka over.  
  3. place in the oven for 15-20 minutes whish you prepare the mint cream.  
  4. Whip cream. Add mint, 1 tbls sugar and remaining vodka and serve with hot pineapple.
