Quinoa and Sweet Potato Patties



  • ½ cup Quinoa  
  • 1 cup water  
  • 1 teaspoon or cube of chicken stock  
  • 1 clove garlic, crushed  
  • 1 level teaspoon of butter/ oil  


  • 1/3 cup breadcrumbs  
  • 250g peeled and roughly chopped sweet potato  
  • ½ small onion, finely chopped  
  • ½ cup frozen mixed corn kernels and peas  
  • 1/3 cup parmesan cheese  
  • 1 clove garlic, crushed  
  • ½ level teaspoon ground cumin  
  • 1 large egg yolk  
  • 1 tablespoon chopped flat leaf parsley  
  • Salt and pepper  
  • Oil for frying  
  • Sweet chilli sauce for serving (optional)


  1. Wash and cook Quinoa with chicken stock, one clove crushed garlic and teaspoon of butter.
  2. Boil, steam or microwave sweet potato until tender.  
  3. In a large bowl, roughly mash the cooked sweet potato with a fork.  
  4. Add the breadcrumbs, Quinoa, onion, peas/corn, parmesan, cumin, garlic, egg yolk, parsley, salt and pepper. Stir until combined.  
  5. Form mixture into eight patties.  
  6. Heat oil in a heavy based, non-stick frying pan over medium heat. Cook patties for about four minutes on each side, until golden brown and cooked through.  
  7. Serve patties hot. Cooked patties can be stored in the refrigerator and reheated in the oven or microwave before serving.
