Potatoes Nicolaise


  • 1.2 kg Desiree potatoes  
  • 300 ml cream  
  • 3/4 cup milk  
  • 3/4 cup grated cheese. 
  • You can also use Sebago, Coliban or Royal Blue potatoes


  1. Par cook sliced potatoes.  
  2. Layer potatoes and thin slices of onion and a sprinkle of grated cheese in an ovenproof dish.  
  3. Pour cream and milk mixture around and over layers. Cover  
  4. Put in moderate over. Cook until tender. Potatoes will absorb mixture.
